We got a real good deal on big pork shoulders, sometimes called "Boston Butt". After scoring the top layer of white fat,I rubbed the roast well with spice, paprika, a hint of hickory and a light sprinkle of brown sugar. Into the oven for 1/2 hour at 450 then down to just under 250 until we just couldn't take it any longer. So tender and juicy, delicious, aromatic and wonderful, we piled in on our plates with fried rice and had a great Winter dinner. Still thinking about it in the morning, we had more for breakfast with our toast before church. I may cook some beans today and put some into the pot.... sounds good already.
We had a fun Saturday of walking, doing some shopping, library, cooking and a quick ride up to Nisswa for coffee. Beautiful day, sunny and warm enough to not be bundled in layers. We watched after dinner a touching documentary type movie called "Young @ Heart, you're never too old to rock". We didn't know it was a documentary until it started, but it was worth watching. Very senior citizens are in a semi-professional musical production, singing rock songs and having fun... imagine a 92 year old gal singing James Brown.... good Saturday night stuff.
We went on a nice road trip yesterday after church. Great scenery, clear roads, sunshine and a thermos of good coffee.... a very good day.
This week will be off and on busy, catching up on a few things around the house, going for walks, and enjoying life.... I'll be baking bread this morning too, whole grains and hearty.
We are feeling very blessed in Life and Love!
Peace!
