Jamaican Delight on Friday Night

Scooter settled in to watch the dinner. Tossed Salad with a Jamaican Spice/Citrus Dressing, Coconut Meatballs Picadillo Style (a sweet/sour, tomato sauce with raisins and ripe olives), Cast Iron Baked Banana Bread, Jamaican Peas and Rice with thyme, garlic, onion and spice, and Toasted Coconut Raisin Gelato for dessert.... it was perfect for the first day of Spring.

It is foggy and mid-thirties this morning, smells springlike outside. Finch at the feeders and crows cawing outside. There is a Raven I believe, circling the neighborhood... it is about twice the size of the crows I normally see.

I'm not sure what all is on the agenda for today, a Saturday off to enjoy relaxing and putzing around the house.

I made Belgian Waffles for breakfast, and with orange juice, was a great start to the day.

I may post more later.. we'll see what all happens here in Brainerd today.

Ooh, I haven't had [good] peas and rice since...well...I went to Jamaica! : )

Cast-iron baked banana bread, eh? I consider myself inspired and look forward to using up my eggs and bananas in a treat this week!
