Now That's Minnesota Stuff!

MMMMmmmm, Sunday we made fish sandwiches for lunch. After church, we were both hungry for fish and wanted to try a new recipe. We baked off some good fillets and combined them with egg, mustard and seasoning, a few breadcrumbs to bind and parmesan..... fried them up for sandwiches and they were nothing short of magnificent! Later in the afternoon, we took the dogs for a long walk with the setting Sun.... a great end to a very nice day.




Monday was a bit warmer, almost no wind and we were in the mood for more fun.... we bundled up and headed to the tennis courts... no nets up, but that made it extra fun because we had longer volleys, no net balls! We got rosy cheeks and lots of exercise laughing and hitting balls back and forth.... great way to not give in to the season change!

To top it off, we went home and built a little fire in the back yard. Peggy had got stuff for a hot dog picnic supper... very cool.

We stopped by Caribou and got good coffee drinks, now steamed with chunks of real chocolate for their special lattes, I had a minty one and Peggy had a caramel chocolate... so good, they warmed us up after the courts.

Standing by the new shed, with the gardening shelve, we waited for the coals to cook our supper. The dogs were running around, glad to have company in the yard.















We warmed up by the fire and got ready to roast our hot dogs after I got some baked beans going on the stove. What a fun way to enjoy the outdoors with the Sun going down. The hot dogs tasted extra good and the beans were great too. We felt extra hearty and Minnesota-ie for spending our Monday evening outside. Cozy and romantic.

Tonight is "Dance Lessons" at the Eagles Lodge. We will 2 step all around the floor, practicing what we have learned the last couple weeks. Nice middle of the week activity.

This weekend is coming up fast, a road trip for an early Thanksgiving dinner with family and more fun.

Busy at work, getting ready for the Holiday Rushes... awesome hours some days, but fun.

So much to be thankful for this Thanksgiving Season... Life and Love are truly Blessed!
